Polished wood, fig and black butter, this nose gives way to a well balanced palate of bitter cherry stones, more fig, sweet cure bacon and quince cheese. The finish is a spicy affair with good nutty notes and just a hint of peat smoke.

A nose where peat simmers under the sherry influence and Demerara sugar notes. The palate is like a smoked rum, rich and rounded. Overall delicious.
