A Canadian whisky is a blend of mature whiskies, each usually distilled from a single grain type. Generally, some of this spirit is distilled to high abv and matured in used barrels to maximize flavours that develop from long exposure to air in the barrel. Other spirit, distilled to low abv in short columns or pot stills is matured in new or once-used barrels to emphasize the flavours derived from the grain, fermentation and wood. Canadian whisky must be aged for at least three years and must have been distilled and matured in Canada.
